Cafeteria Cook

Job Description:

Louisiana Universities Marine Consortium (LUMCON) is accepting applicants for a seasonal (March – October) cook to work in the cafeteria at the DeFelice Marine Center in Cocodrie, LA. The cook would plan, prepare, and serve breakfasts, lunches, and dinners daily for LUMCON staff, students, and visitors. Excellent service is at the heart of the success of LUMCON’s residential experiences. The Marine Center cafeteria has a full working kitchen with a wide range of culinary equipment to provide fresh and nutritious meals that meets the needs of a variety of dietary requirements of LMCON staff and visitors. Programs at the Marine Center include short-term (1-3 days) and long-term (6-10 weeks) programs often requiring from 1 to 3 meals daily. The types of programs and activities at the Marine Center necessitate the cook working hours during evenings, weekends, and some holidays through the late spring and summer season. The spring and fall schedule is irregular to meet the needs of various K12 and university field trips and special events. The summer season does require daily meal service from June to August.

Duties and Responsibilities:
  • Maintain a safe kitchen environment and sanitation in accordance with health department guidelines including product rotation, storage procedures, cooking requirements, and handling techniques
  • Preparation of food includes tasks such as cooking, baking, chopping vegetables and/or fruits, meat-cutting/butcher duties, and short-order or fast-food cooking
  • Prep, set-up, service, clean up (including doing dishes), and restocking working areas
  • Conduct weekly inspections of all kitchen equipment and facilities to ensure proper utilization, care, and maintenance and report equipment/facility/food issues promptly to Supervisor
  • Plan daily menus and appropriate quantities of nutritious and healthy meals which would include alternatives for people with meal restrictions or special needs, such as food allergies, diabetics, gluten-free, vegetarian, and vegan diets
  • Work within a budget to create orders and make purchases of food and cleaning supplies following internal purchasing procedures
  • Confirm, accept, unload, and inventory food, supplies, and equipment deliveries
  • Adhere to mealtime schedules, clean-up, and prep time
  • Clean, organize and reset the kitchen, service, and dining area following each meal
  • Ensure high-quality meal experiences for all visitors by being courteous, friendly, thoughtful, and enjoys being in-serve to our visitors
  • Other duties as assigned by the Supervisor
Physical Aspects of the Job:
  • Must be able to lift and carry a minimum of 25 pounds
  • Prolonged standing, bending, stooping, reaching, and walking
  • Hand-eye coordination and manual dexterity to manipulate equipment
  • Extended exposure to heat
  • Irregular work hours on occasion
  • Excellent communication skills
  • Effective visual and auditory skills. Be able to identify and respond to hazards.
Minimum Qualifications:
  • Minimum 21 years of age
  • High school graduate
  • Must complete employee background screening process
  • Food service experience in an institutional or large food service setting which involved the actual preparation of food. (Experience consisting only of serving, tray prep, cleaning, washing dishes and/or bussing tables will not qualify.)
  • Current ServSafe Food Handler certification
  • Knowledge and experience in ordering, inventory, budgeting, food preparation, line serving, cleaning, and institutional/commercial kitchen equipment
  • Knowledge of federal, state, and local laws concerning food service operations
  • Ability to work as a team member
  • Strong organizational skills
  • Ability to ask for assistance when needed
  • Capability to relate to youth and young adults in a positive manner
